Ok so this is wierd and it has gone on since the very first addition of mechanics from what I can tell. Mechanics seem to be suprisingly good at fighting, more so than people give them credit. I found this out when playing against a wehr friend who had a single squad of vet2 volks with mp40s in the open, no cover. We were testing the effectiveness of Soviet Infantry and as a joke I sent in mechanics to fight expecting their quick demise. To our suprise, the volks were slaughtered by the mechs who didn't even lose A man. I remind you that the mechs were attacking (moving forward) so the volk's mp40s worked extra well but they were still not enough for a simple mech squad. i'm mostly posting this to ask if anyone else has noticed this, I would like to know i'm not the only one.

Well, I suppose you're the only one...
I just checked the weapon/hitpoint/armourstats, and the Mechanic squad got 160health (40 health/man), and they're armed with 4x tt-33 pistols, which deal 9 damage with quite low accuracy. However, they got airborne armour, so they'll receive 25% less damage when they're on the move.

I can only imagine that your mate kept his volks moving, which causes the mp40 only do deal 20% of its original damage, combined with the airborne armour from the Mechanics this could result in the volks loosing.

But maybe you were just unlucky... Strange things may happen in CoH from time to time. However, the armourtype is a relict from like 1.00 or so which has been overlooked, we'll make some appropriate changes for them in the next version :)
