I haven't played a whole lot of Panzerkrieg, but wouldn't it perhaps be better to go for the SU-100 and a Jagdpanzer IV so that the SPGs actually have a chance at taking out the heavier tanks?

Why not give it an overhaul, like:

5 factions: Wehrmacht, Panzer Elite, Commonwealth, United States and USSR.

Then each faction have 5 tanks each:

Wehrmacht:
Tiger (or heck, even king tiger! It will be easy out maneuvered by light tanks, and very slow. Gives a lot of VPs when destroyed)
Panzer IV
Panther? - Stug? - Other?

PE:
Panther? - Jagdpanther?
Hotchkiss
Hetzer

British:
Cromwell? - Stuart?
Firefly
Churchill

United states:
Hellcat
Sherman
Perhing? - M10?

USSR:
T34
IS-2 - SPG?
SPG? - Light tank?

And then the 6 abilities to each. The current panzerkrieg is good, but there just isn't that many tanks. And maybe a new map.

Keep the orignal but add 1 Soviet and 1 Ostheer to the existing gamemode + maybe a new map.

Soviet: T34

Ostheer: Tiger

Because one tank have one doctrine each. And you can only have 3 doctrines - hardcoded.

Yes you can only have 3 doctrines... In these case there are only 3 tanks so it's full :/

#Others: I think the only way to solve this, it to give the game mode a huge overhaul.. But that wouldnt be a bad thing :)

There is no problem actually. It's currently like this: There is one tank of each Commonwealth (Churchill) and Panzer Elite (Hotchkiss), and two for Wehrmacht (Panzer IV, Panther) and the Allies (Hellcat, Sherman). If we would exchange one of the Wehrmacht's/Allies' tanks by a Ostheer/Soviet tank, there is one tank for each faction.
You could easily exchange the Panther by an Ostheer Tiger (or Panther, but wouldn't make perfect sense) and the Sherman by a T-34/76, it can be upgunned like a Sherman (or Hellcat by a T-34/85).

Lemberg - Baraque de Fraiture - Smolensk - Heiligenbeil - Nobel Dynamite Works - Lorient - Poltawa

Lets make a new Panzerkreig raather than changing 2 tanks

SU:
T-34 with option to get 85mm upgrade
IS-2 but some stats may need to be changed
SU-85 or T-70(with powerful upgrades for the T-70)

Ostheer:
Panzer IV
Tiger (with reduced stats ofc)
Stug III or Panzer III

Om Nom Nom Nom
"Panzer-Guppy ready for battle!"
"Ha Ha Ha! We have the ZEAL!"
"Grenadiers! Fall In!!"
